VEGGIE PAKORAS:

1 cup chickpea flour

½ tsp salt

1 tsp cumin

1 tsp turmeric

Pinch cayenne pepper

1 cup thinly sliced onion

1 cup finely chopped broccoli

Water

Preheat oven to 450°. Line a baking sheet with parchment paper.

In a mixing bowl, combine chickpea flour with salt and spices. Slowly add water until you have the consistency of a thick pancake batter, whisking to remove any lumps.

Add onion and broccoli and stir to incorporate.

Spoon large dollops onto the parchment lined baking sheet about 2” apart.

Bake for 7-8 minutes on each side.

Serve with cilantro yogurt.

WONTON SAMOSAS:

Beef Filling:

Vegetable oil for frying

1/2 lb ground beef

1/2 onion, diced

2 tbsp ginger garlic paste  or 1 tbsp grated ginger + 1 tbsp finely diced garlic

1 tsp turmeric

1 tsp garam masala

Salt and cayenne pepper to taste

Fry ground beef until cooked through. Remove from pan, drain all the fat.

Into the pan, add 1 tbsp oil. Fry onions in oil until they start to brown.

Mix spices into ginger garlic paste and add to pan.

Add beef back to pan

Cook for a few minutes and then add in frozen peas.

Add salt and cayenne pepper to taste. Set aside.

Potato Filling:

Vegetable oil for frying

½ onion, diced

2 or 3 medium potatoes, peeled and diced

1 tsp mustard seeds

2 tbsp ginger garlic paste or 1 tbsp grated ginger + 1 tbsp finely diced garlic

1 tsp turmeric

2 tbsp chopped cilantro (optional)

Boil potatoes until tender. Set aside.

Fry onions in 1 tbsp of oil until they start to brown. Add mustard seeds and fry for a couple of minutes. The seeds should be “popping”.

Add ginger garlic paste and turmeric, cook for a few minutes.

Add in the potatoes, continuing to fry.

Stir in cilantro and set aside.

SAMOSAS:

Wonton wrappers

Water

Vegetable oil

Place a heaping teaspoon full of filling into the middle of wonton wrapper.

With your finger, moisten the edges with water. Fold and seal wonton well.

To fry, fill a pan with 2 inches of oil and heat to 350°.

Place wontons, a few at a time, into the hot oil and fry until crisp and browned.

**To air fry, brush the outside of the wontons with oil as needed

Add a single layer of wontons and cook 3-5 minutes at 375° or just until crisp.

CILANTRO YOGURT SAUCE

3 cups cilantro

1 cups plain yogurt

1 clove peeled garlic

1 tbsp lemon juice

Salt, pepper, and red pepper flakes to taste

Place all ingredients in a food processor. Process until sauce is smooth, scraping down the sides.

Taste and add more seasoning as necessary.

Store in the fridge for up to a week.
